A HISTORY OF LOVE FOR PASTA AND CARE FOR OUR CLIENTS

Casanova Food S.r.l., a company based on lactose-free and gluten-free goods, was founded in 2013 in Rubano nearby Padova, not far from Venice: hometown of the family, hence the name “Pasta di Venezia”.

From our passion for fresh pasta and attention to food intolerances, derives the idea of a unique product in its genre in terms of creativity and taste, which aligns with the best Mediterranean tradition and does so with extras: gluten-free and lactose-free!

The determination to discover new businesses led us to project and realize a new factory with highly performing production lines, dedicated to the fresh pasta production made exclusively without gluten or lactose.

In 2023 Casanova Food S.r.l., with is main brand being Pasta di Venezia, celebrates its tenth-year anniversary.

The company, founded in 2013, blends the passion for fresh pasta to the challenge of making it gluten-free and just as good as that with gluten; so to be accessible to everyone, celiacs and gluten intolerant individuals alike.

Federico Gobita, class of 1985, marketing and business management graduate, founder and General Manager of Casanova Food, after a long experience as a cook in Australia and with a lifelong passion for pasta, takes over a small pasta factory that makes fresh, homemade pasta. In the meantime, he takes part to a gluten-free cuisine course and becomes passionate about the gluten-free world, which completely overturns his original plan as he decides to embark on this path. The first few months were completely dedicated to the design and testing of recipes for a pasta dough made only with egg yolk, which also needed to be good, workable and with a great cooking resistance, but still.. gluten-free!

After a hard work on research and development of the product and after miles of dough made, the first fresh pasta boxes for Pasta di Venezia are ready: tagliatelle, spaghetti, cappelletti with crudo ham and ravioli with spinach and ricotta.

Many boxes of the above mentioned selection of references were prepared, loaded on a freezer truck and personally delivered by Federico to pharmacies and gluten free shops all over Italy.

From this starting point, our net of retailers was slowly created. To this day, we still serve them by covering the entire national soil (and beyond).

Since 2013, Casanova Food has never ceised to work and has carried on by investing in research and development to keep on offering new stuffings and pasta types, on top of new products that work to complete our range. This was all made while projecting and realising a new generation, 4.0 production line with the aim of granting maximum food safety as well as the complete control of resources used in the dough processing.

These ten years have been a great achievement but surely not a finishing line, in fact there is still a long road ahead and much dough to be worked!
